Kale Sauté with Peanuts

This classic soul food side dish is reinvented with the crunch of peanuts. 

Ingredients

  • 1/4 cup olive oil
  • 3 shallots, sliced
  • 2 cloves garlic, minced
  • 2 lbs. kale stems and leaves, chopped
  • 1/4 cup dry white wine
  • 1/2 cup reduced-sodium chicken stock
  • Salt and ground black pepper
  • Juice from 1/2 lemon
  • 1/4 cup chopped roasted salted peanuts

Directions

Prep: 20 minutes  Cook: 8 minutes

1. Heat oil in a large skillet with a lid over medium high heat. Add shallots and garlic. Cook for 2 to 3 minutes, until shallots and garlic are fragrant but not browned. Add kale, white wine and chicken stock to the skillet. Cover and cook for 5 minutes. Remove lid and continue to cook until no liquid remains.

2. Season with salt and pepper to taste and sprinkle with lemon juice. Top with the chopped peanuts.  Makes 8 to 10 servings
